Why do people turn to ash when they die in the Deathly Hallows movie?

There are two possibilities.

1. The SPFX people wanted to প্রদর্শনী the অনুরাগী that haven't read the বই that since Tommy and Bella have no souls left, they turn to ash at death, like Dracula.

2. The SPFX people had extra money for CGI since they couldn't be bothered to give us Peeves at all through the films, অথবা have Phineas Nigellus Black do anything আরো than appear for two-seconds in The Order of the Phoenix, অথবা to actually প্রদর্শনী the House-Elves attacking the Death Eaters in the Battle of Hogwarts. অথবা Buckbeak leading the Thestral heard in his attack on the Giants. So they decided to blow it on ridikkulous -er- ridiculous deaths for two of the best villains seen on screen in a Sci-Fi/Fantasy series in at least the last two decades.

Nah... its nothing just that particular dramatic effect ur talking abt ... অথবা else they didnt know what to do with the bodies ...

I think it was just for effect although it did say in the book "Harry stared down at his enemys emty shell" so maybe they took it from that?

When filming her wand fight scene with Julie Walters, Helena Bonham Carter accidentally fell backwards off the table. So, instead of having that in the movie, they opted for the being turned into confetti ash bit and then followed suit with Voldemort.
