Hmmm, tough one! Since it's so hard to pick just one, here's a few of my favorites:
Alice: "He almost killed me!" Hatter: "Well he actually shot me, so...!"
"Trust me, I know a thing অথবা two about liking people, and in time, after much chocolates and cream cakes, it turns into 'What was his name again?'"
Alice: "I have kind of a bad history with liking guys." Hatter: "There's a shock."
The entire "Robinson and Duckworth, Stage Hypnotists" act. :D
Alice: "I have a thing about flying!" Hatter: "Yeah? I've got a thing about bullets!" (my very favorite)
*Alice hugs him tightly* "Ahhh, that feels good. Yeah, we should save that till we're safe."
*When they're safe* "I don't suppose I could get that hug now?"
Alice *about to go back through the Looking Glass* "Cutting it kinda close there." Hatter: "Yeah, I guess I was...trying not to think about it...anyway..."
To be honest...I প্রণয় almost every one of Hatter's lines. And it's hard to pick পছন্দ if আপনি প্রণয় them all, but...

I always have obessed over how his moves his hat around, like after he says the last quote he walks away and like flips his hat IT IS SOOOO COOOOOL.
