On Minnie:
Incest by its meaning is for you to sleep with a relative. Minnie clearly has romantic feelings for Jr., but whether she has sexual ones is unclear. So unless we find proof that she has sexual feelings for Jr., them being together isn't actual incest. It's still creepy though.
