I don't understand something. If Phyllis eventually turned out to be such a great party planner. Why didn't she just plan her own damn wedding instead of ripping off Pam's?

I always just assumed she'd helped Pam plan hers, and ended up using all the stuff she liked for herself :) Alternately, she might just not have wanted to go to all the trouble of finding new florists, caterers, and whatnot, and just took the ones Pam had intended to use.

Good question, though. I never thought about it that way :)
