I find the plot to be quite simplistic.

NO! Just the opposite- Disney tried too hard to be formulaic. with an otherwise simple plot with simple characters (except for Gothel). so actually yes and no.

I see lots of people criticize Tangled for just being a movie about floating lanterns, but I disagree. It constantly takes twists and turns and is much more layered. The relationship while rushed was still there and had to be developed, the abuse Rapunzel had to go through, Rapunzel having to find out about being the lost princess, etc.
