Don't know if she would've fallen in love with another man, but I honestly don't think she would have been content with living in the sea for the rest of her life. She would've eventually figured out a way to become human because she was so curious about life on land.

She would have been caught by fisher sooner or later, because she wasn't careful enough.

Same with DreamyGal too. Romance wasn't really the reason why she wanted to become human.

She was fascinated by the human world before she saw Eric, he was just the extra added bonus. I doubt she would've stayed under the sea for the rest of her life, like DreamyGal said, she would've found some other way to become human.
