Adam isn't simply in Hell. He's locked in the caged with Michael and Lucifer. I doubt that Sam would've been able to rescue him.

As fanfly pointed out, rescuing Adam would have been much harder than Bobby. They've also known Bobby for longer, and Bobby's more of a fan favourite.
